Broiled Fish Steaks with Basil Salsa Prep Time:5 minutes if Basil Salsa is already prepared Cook Time:15 minutes if Basil Salsa already prepared Serves:4Ingredients: 1 1/4 to 1 1/2 pounds of fish steaks or fillets, such as cod, haddock, or halibut, about 1 inch thick
1/2 teaspoon salt
Freshly ground pepper to taste
1 tablespoon reduced-calorie margarine, at room temperature
Juice of 1/2 a lemon
1/4 cup dry white wine
1/4 cup Basil Salsa Instructions: Lay the fish in a broiling pan or roasting pan. Measure it at its thickest part. Season fish with salt and pepper and smear with margarine. Squeeze a few drops lemon juice over fish. Pour the wine into pan (it should just cover the bottom; add more or less as needed). Broil 4 minutes, cover the top of the fish with Basil Salsa, and broil an additional 1-2 minutes, allowing about 5 minutes per inch thickness.
