Kelli's Famous Chicken Pizza Prep Time:10 minutes Cook Time:20 minutes Serves:6Ingredients: 1/4 cup chopped onion
1/2-3/4 cup chopped broccoli
3/4 -1 cup chopped mushrooms
8 oz skinless, boneless chicken
1-1 1/2cups Kraft Free Cheddar Cheese
1 -12 inch pre-made Pizza Crust ( I use Kabuli whole wheat crust)
1/2-3/4 cup pizza sauce ( I use Boboli's pizza sauce)
Approximately 1 tsp Tony Chachere's Original Creole Seasoning
Instructions: Spray frying pan well with Cooking Spray. Add chopped onions, broccoli and mushrooms. Add 1 tbsp water and 1/2 tsp of the creole seasoning. Cook approximately 5 minutes or until softened. Place in strainer and allow vegetables to drain well. Preheat oven to 350 degrees F.
Coat grill or frying pan with cooking spray. Sprinkle Chicken lightly with the creole seasoning and place on pan. Cook until chicken is done, then chop up chicken into small pieces.
Coat Pizza crust with pizza sauce, then top with shredded cheese. Spread vegetables over the cheese and then chicken over the vegetables. Place in heated oven and cook for 10-15 minutes or until crust becomes slightly browned on edges. Slice and serve.
Note: Numerous varieties of vegetables can be used . For instance, add chopped jalapenos, sundried tomatoes,or artichoke hearts. Plus, the amount of each vegetable can be varied to your liking. Reference:Kelli's Cookbook
