Portebello Mushroom Burger Prep Time:1 minutes Cook Time:10 minutes Serves:1 minutesIngredients: 1 large portebello mushroom
1 tsp olive oil
1 slice tomato
1 slice red onion
1 oz Gruyere or Feta cheese
2 tsp Dijon mustard
1 whole-wheat bun or 2 slices whole-grain bread Instructions: Using a non-stick pan, saute portobello mushroom in olive oil for 5-10 minutes. Slice tomato and red onion. Put dijon mustard and cheese onto bun. Layer warm mushroom with tomato and onion slices inside the bun atop of the cheese. Serve. Reference:Shape Magazine; March 2002 Volume 21 Number 7
