 | Stir-Fry Beef and Broccoli Prep Time:10 minute (plus optional marinade time) Cook Time:10 minutes Serves:4Ingredients: 1 pound extra-lean round steak or flank steak, thinly sliced
1 teaspoon oil
1 pound broccoli (2 large stalks), cut into florets
1/2 cup water
2 tablespoons soy sauce
2 teaspoons cornstarch mixed into 1 tablespoon water
Marinade
2 tablespoons soy sauce and 1 tablespoon sherry. Instructions: 1. Slice the beef into thin strips. If time permits, place in marinade and refrigerate 1 hour or overnight.
2. Heat a large skillet, wok, or non-stick frying pan until very hot. Add 1 teaspoon oil, then beef. Stir quickly, browning the beef on all sides. Remove the beef to a plate.
3. Add the broccoli to the frying pan along with 1/2 cup water and two tablespoons soy sauce. Cover and steam until tender-crisp, about 5 minutes.
4. Return beef to the pan; stir in cornstarch and water mixture; cook until the liquid reaches a desired consistency.
