 | Zucchini Cake Prep Time:15 minutes Cook Time:40-45 minutes Serves:12 piecesIngredients: 1 cup brown sugar
4 egg whites
1/2 cup oil, preferably canola
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt
2 cups grated zucchini
2 teaspoons baking soda
1 teaspoon baking powder
2 cups flour, preferably half white and half whole wheat Instructions: 1. Preheat oven to 350 degrees
2. Combine sugar, eggs, oil, vanilla, cinnamon, and salt. Mix well.
3. Stir in the grated zucchini, then the baking powder, baking soda, and flour. Blend gently.
