Cook Time:40-45 minutes
Serves:12 pieces

Ingredients:
1 cup brown sugar
4 egg whites
1/2 cup oil, preferably canola
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt
2 cups grated zucchini
2 teaspoons baking soda
1 teaspoon baking powder
2 cups flour, preferably half white and half whole wheat

Instructions:
1. Preheat oven to 350 degrees
2. Combine sugar, eggs, oil, vanilla, cinnamon, and salt. Mix well.
3. Stir in the grated zucchini, then the baking powder, baking soda, and flour. Blend gently.
4. Pour into a 9" X 9" baking pan that is non-stick, treated with low-fat cooking spray. Bake for 40-45 minutes, or until a toothpick inserted
