Light Guacamole Prep Time:10 minutes Cook Time:No cooking Serves:About 1 1/2 cupsIngredients: 1 Avocado
1/2 15 oz can of white beans (rinsed and drained)
1 tbsp fresh lime juice
1 clove garlic
1 tbsp chopped, fresh cilantro
Salt to taste
Pepper to taste Instructions: Combine in a blender or food processor peeled and pitted avocado, white beans, lime juice, and garlic. Puree until smooth and stir in cilantro; season to taste with salt and pepper.
This tastes good on a Turkey Sandwich or with Mexican food, such as Fajitas or Tacos or simply as a dip. Reference:Kelli's Cookbook
