Light Hummus Prep Time:15 minutes Cook Time:No cooking Serves:About 3 cupsIngredients: 15 oz can garbanzo beans (drained)
1/2 15 oz can white beans (drained and rinsed)
2 tbsp tahini
1 clove garlic
1/4 cup water
1 tbsp lemon juice Instructions: Combine in a blender 15-oz can garbanzo beans (drained), half of a 15-oz can white beans (drained and rinsed), 2 tbsp tahini, 1 clove garlic, 1/4 cup water and 1 tbsp lemon juice; puree until smooth
Great on pita bread topped with tomatoe and cucumber slices or dip with baked pita chips.
Note: Hummus is not only served as an appetizer. It is often used to spread on bagels and sandwiches, as well as serve as a side dish many Mediterranean entrees. Reference:Kelli's Cookbook
