Oatmeal muffins Prep Time:20 Minutes Cook Time:15-20 Minutes Serves:12 MuffinsIngredients: Cooking spray
2 large egg whites
1/3 cup maple syrup
3 tbsp freshly squeezed orange juice
1 cup skim milk
1 tbsp pure vanilla extract
1 tbsp ground cinnamon
1/8 tsp ground allspice
1/8 tsp ground cloves
1/8 tsp ground nutmeg
1 tbsp orange zest
1 1/2 cup rolled oats
1 cup whole wheat flour
1 tsp baking powder
1/4 cup chopped pecans
1/4 cup dried cranberries Instructions: Preheat oven to 350 degrees F. Spray tin 3 times with cooking spray. Put the egg whites in a large mixing bowl and whisk until frothy. Whisk in the maple syrup, orange juice, and milk. Add the vanilla, cinnamon, allspice, cloves, nutmeg and orange zest. Whisk to blend. Stir in the oats, flour, and baking powder with a wooden spoon. Fold in the pecans and dried cranberries. Fill the tin with the batter (each cup should be 2/3 full). Bake for 20 min or until done. Reference:Kelli's Cookbook
