Spiced Bran Muffins Prep Time:20 Minutes Cook Time:15-20 Minutes Serves:12 MuffinsIngredients: Light vegetable cooking spray
1/2 cup molasses
2 tbsp honey
2 large egg whites
1/4 cup plain nonfat yogurt
1/4 cup 1% milk or soy milk
1/2 cup wheat bran or wheat germ
1 cup whole wheat flour
1-1/2 tsp baking powder
1 tbsp ground ginger
1 tsp ground cloves
1/4 cup chopped walnuts
1/4 cup golden raisin
Instructions: Preheat oven to 350 degrees F. Coat a 12-well muffin tin with the cooking spray. Warm the molasses and honey in a small saucepan over low heat just until it begins to steam. Remove the pan from the heat and set it aside to cool. Whisk the egg whites, yogurt, and milk together ina large mixing bowl until blended. Whisk in the molasses and honey mixture. Using a wooden spoon , stir in the bran, flour , baking powder, and spices. Fold in the walnuts and raisins. Turn the batter into the prepared muffin tin and bake for 15-20 minutes. Serve warm.
